You should be able to do this, but you will have to jailbreak your phone.
This is a process by which you download some software and hack into your phone so that it no longer has the restrictions placed on it by ATT. By default, ATT has locked the iphone to their network.
Since your account data etc is all contained with your sim card you should be able to drop it in a jailbroken iphone and have service right away.
